Just to add a little French flavour to our next meal, I’ve decided to make some French Baked Potatoes. This can be served as the main course or as a side dish.
Time:45 min, Prep: 15 min. Cook: 30 min.
Servings: 6
Ingredients:
- 600 g potatoes
- 4 eggs
- 60 g butter
- 10 tablespoons sour cream
- 100 g Cheddar cheese, grated
- Salt, pepper
Directions:
Wash potatoes thoroughly, put them in a pot with water and salt and boil them for about 30 minutes or until soft. Drain water, let potatoes cool, peel and slice them. Boil two eggs for 10 minutes. Remove the shell from the hard-boiled eggs and cut them into slices.
Grease a baking pan with half of the butter. I used a 8’’ square glass pan (oven safe).
Arrange half of the sliced potatoes in the pan and sprinkle some salt and pepper. Add the eggs and half of the grated cheese.
Add another layer of sliced potatoes and again season with salt and pepper. Beat the other 2 eggs and mix with sour cream. Pour the mixture over potatoes and add the remaining cheese and melted butter.
Preheat oven to 180°C (350°F). Place in the oven and let it bake for 20 minutes or until top of shredded cheese is golden.

You are very creative …I enjoyed looking thru your recipes…but I am not familiar with G’s for instance, how much is 600 g potatoes? 100 g cheese?
Roxy says
Thanks Jeani! That would be about 1.3 pounds or 21 oz potatoes and for the cheese, 1/4 pounds or 3.5 oz
