Ingredients
- 250 g (1/2 lb or 8.8 oz) fettuccine pasta
- 1 big onion
- 1 big carrot
- 1 l tomato sauce
- 1 celery stalk
- 1 sprig of fresh basil
- 150 g (1/3 lb or 5.3 oz) freshly grated parmesan + more for serving, if desired

Directions
Peel and finely chop the onion. Peel and dice or grate the carrot.
Heat the oil in a pan and cook the onions until translucent. Add the carrots and cook for 3-4 more minutes.
Add the tomato sauce over the onions and carrots. Season with salt.
Add the celery stalk and sprig of basil. Bring everything to a boil. Then, simmer on low heat for 40 minutes, until the sauce has reduced.
In a large pot, bring 3.5 l of water to a boil and add 2 teaspoons of salt. Add pasta to boiling water and cook uncovered according to your package instructions. I cooked my pasta for 3-4 minutes. If you’re using fresh fettuccine pasta, then 1-2 minutes is enough. Drain the cooked pasta.
Add half of the cooked tomato sauce in a serving bowl. Place the cooked pasta on top and add the remaining tomato sauce and grated parmesan. Mix to combine.
Serve topped with more grated parmesan.
