This Dominican Coco Loco recipe is inspired by our recent trip to Punta Cana. It is one of the most popular drinks in Dominican Republic. The coconut cream and pineapple juice give the drink a tropical flavour while the rum and amaretto liquor provide a smooth, boozy finish.
Skip the alcohol to make a tasty mocktail that can be enjoyed by all, including kids.
Ingredients (2 drinks)
- 120 ml (1/2 cup / 4 oz) white rum
- 240 ml (1 cup / 8 oz) pineapple juice
- 30 ml (1/8 cup / 1 oz) amaretto almond liquor
- 120 ml (1/2 cup) coconut cream
- 450 g – 600 g (3-4 cups) ice cubes
- 2 tsp sugar (optional), I usually add it as I prefer it a bit sweeter
Directions
Add pineapple juice, rum, amaretto liquor, coconut cream, and sugar to a blender.
Add the ice.
Blend until smooth.
Pour the mixture into a glass.
