I made this Stylish Girl Cake to celebrate the birth of a special little girl in our family. This adorable cake is made by using a doll as the centrepiece but it’s much easier to make than the classic doll cakes for which a doll is inserted in the middle of the cake. With just a few easy steps and some basic supplies, you can create a memorable and impressive dessert that any young girl will love.
You can use a store-bought cake or a homemade cake. If you buy a cake make sure it’s at least 15 cm (6’’) tall. The girl doll looks better if her feet are not touching the cake board. You can also always buy two cakes, stack them on top of each other and apply a layer of frosting.
I made a vanilla cake filled with two layers of pastry cream buttercream and two layers of whipped lavender chocolate ganache. I loved all the flavours in this cake, so delicate and delicious! The buttercream has a creamy texture and a subtle vanilla flavour that pairs perfectly with the light floral notes of the whipped lavender chocolate ganache.
Ingredients/Tools
- a store-bought or homemade cake covered in buttercream (or any other frosting that is stable); the cake should be at least 15 cm (6’’) tall
- 400 g – 800 g (2-4 cups) of buttercream, depending if you want to make the dress short or long – Swiss Meringue Buttercream is my favourite for its stability and taste and you can get the recipe here
- gel food colouring or oil-based food colouring of choice
- a doll with flexible joints so that you can place it in a sitting position on the cake
- plastic foil
- Wilton 224 piping tip for the drop flowers on the top of the dress
- Wilton 1M piping tip for the rosettes
- two piping bags
Directions
Wrap some plastic foil around the torso of the doll and a bit on the shoulders and legs. This will create a barrier between the doll and the cake.
Position the doll in a sitting position on the frosted cake.
Place the buttercream frosting in a piping bag fitted with the Wilton 224 tip. Press the tip onto the doll’s torso, starting at the top. Then, squeeze the bag, turn it slightly clockwise, release the pressure and lift.
Make sure you clean your piping tip if buttercream builds up.
Repeat these steps to cover the entire torso.
Then, to make the rosettes on the dress, place the frosting in the piping bag fitted with the Wilton 1M tip. Place the tip perpendicular to the doll and start piping a spiral while gently squeezing the bag. Then, release the pressure and lift.
Repeat these steps to make the dress – short or long, however you prefer.
