These delicious and crunchy pan-fried cod fillets are perfect for a quick meal. Pour yourself a glass of white wine and you’ve got the perfect dinner. This recipe uses only five main ingredients ( salt/pepper/oil for frying do not count), and takes only 25 minutes to make so you’ll be in and out of the kitchen in no time :). Who says a five-ingredient recipe can’t be delicious? I want to challenge myself to come up with or find all delicious recipes out there that use only five ingredients and then share them with you. From now on I’ll call these recipes 5licious… ok, just coined 5licious 🙂 !!!

Ingredients:
- 8 white fish fillets (cod, haddock, snapper, perch), I used cod
- 8-10 Tbsp cornmeal
- salt and pepper
- Sunflower oil for frying
- 4 Tbsp mayonnaise
- 2 Tbsp sweet chilli sauce
- 4 Tbsp chopped fresh chives
Directions:
Season the fish fillets with salt and pepper. Place the cornmeal on a plate and press the fillets into the cornmeal to coat thoroughly.
Heat the oil in a pan over medium heat. Add the fish and cook 3 minutes on each side or until tender and the fish flakes easily. Remove and drain on paper towels.
Combine the mayonnaise, chilli sauce and chives in a small bowl and serve with the fish.
