So what do you do when you have too many blueberries from the farmers’ market, you have sliced almonds that you bought a while ago to make something but can’t remember what and you’re craving a dessert? Well the answer is easy, you come up with the most delicious and amazing 5-ingredient recipe – Blueberry Cream Cheese Dessert with Roasted Almonds.
This dessert has become one of our favorite end-of-summer desserts; I made it twice this week so that must mean something! It’s easy to make, there is no baking involved and it’s packed with vitamins, fiber and antioxidants. Plus blueberries and cream cheese just go so well together in desserts, don’t you think?
I love love love this dessert because it’s creamy, refreshing and not overly sweet. Also, the roasted almonds add a nice nutty flavor to the dessert and a crunchiness that’s very enjoyable. So go get some blueberries while they’re still in season and try it out, you won’t regret it!
Time: 35 min, Prep: 15 min. Cook: 20 min.

Ingredients:
- 2 cups (550 g) blueberries + 3 Tbsp water
- 1 cup (200 g) sugar
- 5 eggs
- 250 g (8 oz) cream cheese, at room temperature
- 1 cup sliced almonds
Directions:
Cook blueberries mixed with 3 tablespoon of water on medium heat for 12-15 minutes, or until soft.
Lightly beat the eggs with half of the sugar.
Pass the cooked blueberries through a fine mesh sieve and pour slowly over the beaten eggs.
Return to heat and cook for another 5-7 minutes or until the mixture thickens. Set aside to cool.
Beat the cream cheese and the remaining sugar with a mixer until smooth.
Mix the cream cheese and the cold blueberry mixture.
Roast the almonds in the oven for about 5 minutes at 350°F (180°C) or until you achieve a light to medium golden brown color.
Add a layer of roasted almonds in each dessert cup. Divide the blueberry-cream cheese mixture between the two dessert cups. Garnish with a few blueberries and some almonds.
