You can enjoy this easy and healthy salad anytime of the day. And in case you didn’t know, quail eggs provide great health benefits, whether cooked or raw. They are proven to be a great source of vitamin A, B1, B2, B6, B12 and D. Also, they are used to increase appetite, strengthen the immune system and can help treat gastritis, stomach ulcer, constipation, asthma and diabetes. My grandma passed away from lung cancer about a decade ago (still miss her so so much :() but I remember she used to consume these little eggs raw in the morning on an empty stomach to help her immune system and to inhibit cancerous growth.
Oh and another thing is that even though they are so small their nutritional value is 3-4 times greater than that of chicken eggs and they also provide 5 times more phosphorus and 7.5 times more iron. Servings: 4 servings
Ingredients:
- 1 head of romaine lettuce
- 10-12 quail eggs
- 250 g smoked salmon
- 3 green onions
- 1 cucumber
- 3 Tbsp mayonnaise (if you want to make mayo at home check out my Boeuf Salad post for the recipe)
- salt and pepper
Directions:
Place the quail eggs in a pot with water and bring to a boil over medium heat. Boil them for approximately 10 minutes.
Thoroughly wash the romaine lettuce and tear into bite-sized pieces.
Cut the onions, cucumber and smoked salmon into small pieces.
Peel and slice the eggs in half lengthwise.
Place the romaine lettuce in a salad bowl. Add the eggs, cucumber, green onions and smoked salmon. Pour the mayonnaise over and toss gently to mix.
