I was hoping to share this delicious recipe with you last week but I’ve been busy… too busy partying. We had our 10-year high school reunion and it was so exciting to catch up with old friends I hadn’t seen since graduation! I’m still kind of half-asleep as I write this : -).

What can I say about this Spinach Sweet Potato Dip recipe?! It’s just an awesome healthy recipe with only 5 ingredients that we enjoy as a dip and our baby as a full meal! Yes, you read well, baby food. It’s all about cooking efficiently nowadays hence why I try to come up with recipes that we can all enjoy. Daniel is eating this like a champ and we just love it as a dip and we like serving it with baked pita chips (tortilla chips or crackers are another option).

This dip provides so many vitamins and nutrients that are essential for babies and adults alike and really, every single ingredient in this dish has its own purpose. The spinach and sweet potato provide the much needed iron, calcium, protein, magnesium, potassium and vitamins A,C &E; the egg yolks contain the omega-3 fatty acid, which is essential for the brain development and eyes, and the omega-6 fatty acid which is necessary for healthy skin & hair, reproduction and growth; the garlic is great to strengthen your immune system; and the yogurt is loaded with calcium, many vitamins and can help regulate your digestion.

We don’t usually add any salt and pepper but feel free to season it to your taste. Don’t forget, no salt should be added to food for babies under 1 year old! Try it out this recipe and you’ll thank me later ; )!  

Time: 75 min, Prep: 5 min.  Cook: 70 min.
Servings: 4-6

Ingredients:

  • 215 g (7.5 oz ) fresh spinach
  • 1 medium-sized sweet potato
  • 2 garlic cloves
  • 2 egg yolks
  • 5-6 Tbsp plain yogurt
  • Salt and pepper (optional)

Spinach Sweet Potato Dip - Ingredients 

Directions:

Wash and poke holes in the sweet potato with a fork. Wrap the sweet potato in a foil or place it in a non-stick pot or baking pan. Bake in a 200°C (400°F) oven for 45-60 minutes or until soft.

Wash spinach and cook in a pot with water just until tender and wilted.

Puree spinach in a food processor or blender until smooth.

Scoop out the “meat” from the sweet potato and combine with the spinach, minced garlic and egg yolks.

Lastly, add the yogurt and toss to combine.

Water, oil for frying, and other essential spices in anyone’s cupboard (salt, pepper, paprika, oregano, basil,  rosemary, chili, curry, bay leaves, thyme, cinnamon , vanilla extract, sugar) do not count!

        I also love spinach dips and can’t wait to give this one a try. From your picture, the egg yolks appear to be hard cooked, but I am not familiar with that treatment. Can you provide directions for this step?

          Boil the eggs for 5 minutes and that should give you hard cooked egg yolks.

            It is really important to include this step in your recipe. I highly recommend you edit your recipe to include the step of hardboiling the eggs. As a former educator of people with visual impairments, you must include the written instructions and should not assume people can gather all the information from pictures. Please be responsible and fix this recipe to prevent future mistakes.
