The cake in this picture is a walnut cake filled with two layers of mascarpone mousse and two of whipped chocolate ganache with walnuts.
Ingredients
- 250 ml (1 cup) whipping cream
- 120 g (1 cup) powdered sugar
- 250 g (1 cup / 8.8 oz) mascarpone cheese
- 2 Tbsp vanilla extract or 2 tsp vanilla bean paste
- 10 g unflavoured gelatine powder softened in 120 ml (1/2 cup) water
The quantities in this recipe will make enough mascarpone mousse to fill an 18 cm (7’’) cake with two layers of filling.
Directions
First, soften the gelatine in water for 10 minutes.
In the meantime, beat the whipping cream with the powdered sugar with a mixer on high speed until soft peaks form.
Then, melt the softened gelatine in the microwave a few seconds until all the granules are dissolved.
Add the vanilla extract or vanilla paste over the mascarpone cheese. Pour the melted gelatine over the mascarpone cheese and mix it with a whisk until it’s well incorporated. Then, add the whipped cream over and mix slowly.
Lastly, fill your cakes immediately and refrigerate them for at least 6 hours or overnight so that the gelatine sets.
