When it comes to breakfast, poached eggs are my favourite. This past weekend I have decided to try something different so I made baked eggs in tomato sauce. You can quickly make the tomato sauce and either poach or bake the eggs in it. You can serve them with toasted bread or garlic bread. They are also prefect for lunch or supper when you want to whip up a quick meal.

Ingredients:
- 6 eggs
- 4 Tbsp oil
- 1 onion
- 4 garlic cloves
- 500 g diced tomatoes
- 150 ml water
- 1- 2 tsp paprika
- 1 tsp dried oregano
- salt
- Fresh parsley and feta cheese or parmesan, for serving (optional)
Directions:
Finely chop onion and mince garlic. In a skillet, heat the oil and add the onions. Cook for about 2 minutes and then add diced tomatoes.
Bring to a boil and add oregano and paprika. Season with salt. Simmer for 10 minutes on medium-low heat. Add the garlic.
Transfer the tomato mixture into an oven-proof dish. Crack eggs into the mixture and place in the preheated oven (350°F) between 10-15 minutes, depending on softness / firmness desired.
Top with some parsley and cheese and serve with toasted bread.
