Salad Ingredients
- 200 g dried pasta
- 10 cherry tomatoes or 2 grape tomatoes
- 1 medium-sized cucumber
- 6 green onions
- 100 g feta cheese, crumbled
- 20 black olives
- Salt
Dressing Ingredients
- 5 Tbsp. lemon juice
- 8 Tbsp. extra-virgin olive oil
- ½ tsp. dried mint
- ½ tsp. dried rosemary
- ½ tsp. dried oregano
- ½ tsp. sugar
- Salt and pepper
Directions
In a large pot, bring 2.5 l of water to a boil and add 1 tsp. of salt. Add pasta to boiling water and cook uncovered for 12 minutes. Rinse cooked pasta in cold water and drain.
Dice cucumbers, tomatoes, green onions and olives.
Grind your spices using an electric spice or coffee grinder (or manually using a pestle and mortar). Combine olive oil with seasonings. Add lemon juice.
Mix pasta with all diced vegetables and feta cheese. Pour dressing on salad and toss gently to mix.
