Do you love desserts that are quick, easy, and absolutely dreamy? If so, this 15-Minute Dream Cake recipe is just what you need! With only a handful of ingredients and just 15 minutes of prep time, you can whip up a decadent and delicious cake. Featuring layers of tender ladyfinger cookies and a rich and creamy mascarpone cheese filling, this cake is the perfect way to indulge your sweet tooth without spending hours in the kitchen.
I call it Dream Cake, as that cake filling is just dreamy, and creamy and smooth and delicious… and I’m using the easiest technique to roll these ladyfingers up into a cake! Read the post below or watch the video to see how it’s made!
Ingredients
- 36 ladyfinger cookies
- 950 g (4 cups) mascarpone cheese
- 475 ml (2 cups) whipping cream
- 300 ml (1 1/4 cups) sweetened condensed milk
- 350 ml (1 1/2 cups) brewed coffee, sweetened to your liking and cooled (if you want your cake to be more kid-friendly, you can use instead hot chocolate or milk mixed with 1 Tbsp of cocoa powder)
- optional: cocoa powder for dusting or grated chocolate
- plastic wrap / cling wrap
These ingredients will make an 18 cm (7’’) round cake.
Directions
Beat the whipping cream with a mixer until soft peaks form.
Add the mascarpone cheese and condensed milk and mix on medium-high speed until smooth and creamy (~ for 1.5 minutes).
Pour the cooled coffee into a shallow dish.
Place a 90 cm (35’’) long piece of plastic wrap on your counter.
Dip each ladyfinger cookie into the coffee, soaking for a second until lightly coated. Lady fingers absorb moisture very rapidly so you need to dip them quickly (do not over soak).
Line the ladyfingers next to each other on the plastic wrap with the sugared side facing upward.
Place dollops of mascarpone mixture on top of the ladyfingers, next to each other. Use 2/3 of the mascarpone mixture and save there rest to decorate the cake. Then, use a spatula to spread the mixture evenly, making sure you cover the entire surface of the ladyfinger cookies.
Starting at one end, carefully roll the ladyfingers into a cake shape.
Once you’re done rolling it, keep the wrap on and carefully place the cake on a serving platter.
Then, remove the plastic wrap.
Decorate the cake as desired with the remaining mascarpone mixture.
If desired, dust the top of the cake with cocoa powder or grated chocolate.
You can serve the cake right away. If you want the cake slices to hold their shape better, refrigerate the cake for 4 hours.
We usually dive right in and there is not much left to refrigerate ☺️.
