Do you love desserts that are quick, easy, and absolutely dreamy? If so, you will love this 15-Minute Dream Cake with Peaches recipe! With only a handful of ingredients and just 15 minutes of prep time, you can whip up a decadent and delicious cake. Featuring layers of tender ladyfinger cookies, a rich and creamy mascarpone cheese filling and refreshing peaches, this cake is the perfect way to indulge your sweet tooth without spending hours in the kitchen.

Ingredients
- 36 ladyfinger cookies
- 950 g (4 cups) mascarpone cheese
- 475 ml (2 cups) whipping cream
- 300 ml (1 1/4 cups) sweetened condensed milk
- 2 jars of sliced peaches in light syrup ( 2 x 720 ml); you can also use fresh peaches (ripe but firm, peeled) and make simple syrup in which you’ll dip the ladyfingers (7 Tbsp sugar and 300 ml water, dissolved together in a saucepan over medium heat; add vanilla extract or any desired flavoring; let it cool off before using)

These ingredients will make an 18 cm (7’’) round cake.
Directions
Remove the sliced peaches from the syrup. Save the syrup for later. Drain the fruit very well.
Beat the whipping cream with a mixer until soft peaks form.
Add the mascarpone cheese and condensed milk and mix on medium-high speed until smooth and creamy (~ for 1.5 minutes).
Place a 90 cm (35’’) long piece of plastic wrap on your counter.
Dip each ladyfinger cookie into the syrup you saved earlier, soaking for 2-3 seconds on each side until lightly coated. Do not over soak, the ladyfinger cookies should not be mushy.
Line the ladyfingers next to each other on the plastic wrap with the sugared side facing upward.
Place dollops of mascarpone mixture on top of the ladyfingers, next to each other. Use 2/3 of the mascarpone mixture and save there rest to decorate the cake. Then, use a spatula to spread the mixture evenly, making sure you cover the entire surface of the ladyfinger cookies.
Cut 2/3 of the sliced peaches into small pieces. Arrange them in an even layer over the mascarpone filling.
Starting at one end, carefully roll the ladyfingers into a cake shape.
Once you’re done rolling it, keep the wrap on and carefully place the cake on a serving platter.
Then, remove the plastic wrap.
Decorate the cake as desired with the remaining mascarpone mixture and the rest of the sliced peaches.
You can serve the cake right away. If you want the cake slices to hold their shape better, refrigerate the cake for 4 hours.
