Here’s a basic recipe for egg noodles. Did I tell you how much I love my KitchenAid and the pasta attachments? It’s sooooo much easier to make fresh pasta with the KitchenAid than rolling/cutting it by hand or even using the old-fashioned pasta machine.
Time: 20 min, Prep: 20 min.
Ingredients:
- 1 egg
- 100 g sifted all-purpose flour (almost 1/2 cup)
- a pinch of salt
If you want to make more, for every egg add 100 g more of flour.
Directions:
Mix flour, egg and salt and hand knead for 3-4 minutes. Let it rest of 10 minutes.
Divide the dough in half and flatten each piece slightly. Feed dough through pasta roller several times (start at 1-2 and change roller setting to 8 to make very thing “angel-hair” type pasta). Flour your pasta sheets every time you feed them through the roller to keep the pasta from sticking.
Feed the flattened pasta sheets through the pasta cutter attachment to make the noodles.
If you don’t have a pasta machine then roll out the dough until very thin (almost paper thin) on a well floured surface. Sprinkle some flour on top and roll up the dough to look like a log. Cut noodles into thin strips with a sharp knife.
Toss the noodles with flour and let them dry until you’re ready to use.
