This is my dad’s favourite dish and one of the very few recipes he prepares at home :). It’s easy to make, delicious and needs to be served on weekends (you don’t want the garlicky smell to flood your office, right?!). We served it with a roasted tomato & garlic sauce and our traditional Romanian mamaliga (polenta). You can find the recipe for polenta here.

Servings: 6-8
Ingredients:
- 2 kg trout
- 8-10 Tbsp cornmeal
- salt
- 3 ripe tomatoes
- 10-15 garlic cloves
You also need sunflower oil for frying.
Directions:
Cut each fish in 3-4 slices and season with salt. Place the cornmeal on a plate and press the fish into the cornmeal to coat thoroughly.
Heat the oil in a pan over medium heat. Add the fish and cook 7-10 minutes on each side or until tender and the fish flakes easily. Remove and drain on paper towels.
Roast the tomatoes on a grill, grill pan or even in the oven. Mash the tomatoes with a fork or in a food processor.
Mince garlic and add it over the pureed tomatoes. Add salt to taste. Also, I usually add 1 cup of water or more, it depends how thick you want the sauce.
