This Roasted Peppers & Feta Dip is a crowd favourite at any gathering. The dip is made with just a handful of ingredients, including roasted red peppers, tangy feta cheese, and zesty lemon juice. It’s perfect for dipping with pita bread, pita chips, crackers, or veggies.
Ingredients
- 2 red peppers
- 200 g (7 oz) feta cheese
- 1 garlic clove, peeled
- juice from 1/2 lemon
- 60 ml (1/4 cup) olive oil
You can also sprinkle some paprika on top but that is totally optional.
Directions
Wash and dry the red peppers.
Roast them on a grill, in the oven or on a gas burner. I roasted mine on the grill for about 10 minutes, turning them every 2-3 minutes until they looked soft and charred.
If you’re roasting them in the oven, preheat you oven to 245°C (475°F ). Place the peppers on a baking sheet and roast them for about 40 minutes, or until soft and charred.
Remove the stem, skin and seeds. To make it easier to remove the skin, just place the roasted peppers in a bowl and cover it with a lid or a plate for a few minutes. This will create some steam which will help loosen the skin.
Place the peppers, feta, olive oil, garlic clove and lemon juice in a food processor and pulse the mixture until smooth. You can also use a hand blender to chop everything up.
Enjoy the dip with pita bread, pita chips, crackers or sliced vegetables!
