Yet another quick and easy chicken recipe with mushrooms that tastes delicious. Chicken Chasseur is a French bistro classic that can be served with mashed potatoes. The tomato and white-wine sauce adds a great flavour to the dish. C’est magnifique!
Time: 95 min, Prep: 20 min. Cook: 75 min.
Servings: 6-8
Ingredients:
- 1 kg chicken thighs, boneless / skinless
- 2 cloves garlic
- 1 Tbsp oil
- 1 onion
- 100 g mushrooms, sliced
- 1 tsp fresh thyme leaves
- 400 g can diced tomatoes
- 120 ml white wine
- 1 Tbsp tomato paste
Directions:
Preheat the oven to 180ºC (350ºF).
Heat the oil in a pan and brown the chicken in batches over medium heat. Drain on paper towels and transfer to a baking dish.
While the chicken is cooking, slice the onion and finely chop the garlic.
Add the garlic, onion and mushrooms to the pan and cook over medium heat for about 5 minutes.
Spread mixture evenly over chicken thighs, add tomatoes and sprinkle the thyme over.
Combine the wine and tomato paste and pour over the chicken. Bake, covered, for 60 minutes, or until the chicken is tender.

I tried this recipe and although I forgot to buy the mushrooms with some cartofi natur, some hot sauce on top and a glass of white wine on the side (the same wine used on the chicken) it was still great :)….thanks for posting this! I’ll let you know if I manage to make it with mushrooms too :).
