We eat fish quite often for two main reasons – firstly, we love it because it’s healthy and low in fat. Researchers have proved that the omega-3 fatty acids from fish can help us turn back the biological clock and live longer. Secondly, fish is great because you can make tons of quick and easy recipes with it. This Cheesy Fish Fillet dish is perfect for a quick dinner and is super tasty. It took me about 10 minutes to prepare and it was downright delicious!

Ingredients:
- 500 g white fish fillet (I used cod)
- 50 g butter
- 1 small onion
- 300 g grated cheddar cheese
- 200 g sour cream
- juice from ½ lemon
- salt and pepper
- Lemon slices, for garnishing
Directions:
Melt the butter in a pan. Blend in the lemon juice and sour cream. Remove from the heat and set aside.
Thinly slice the onion and separate the onion slices into rings.
Preheat the oven to 180ºC (350ºF).
Place the fish fillets in a baking dish and season with salt and pepper.
Spread the onion rings and pour the sour cream mixture over the fish. Top with the cheddar cheese and bake for about 30 minutes.
Serve the fish fillet on a bed of lettuce leaves and garnish with lemon slices.
