This is a tasty and easy to prepare Romanian recipe known as ‘Tocanita de ficatei cu ciuperci’. It is full of flavour and nutritious as liver is a good source of iron, protein and Vitamin A. We usually serve it with polenta.
Time: 40 min, Prep: 15 min. Cook: 25 min.
Servings: 4-5
Ingredients:
- 500 g chicken livers
- 300 g mushrooms (I used canned but fresh mushrooms are perfect as well)
- 1 onion
- 3 garlic cloves
- 300 ml white wine
- 2 Tbsp oil
- 1 tsp Vegeta
- ½ tsp ginger
- A pinch of thyme leaves
- Pepper and salt
Directions:
Heat oil in a pan over medium heat and add chopped onions. Cook onion until translucent. Wash chicken livers thoroughly in cold water and cut into small bite size pieces and add to the pan. Cook for 5 minutes. Stir in mushrooms.
Pour wine over and let everything simmer for 10 minutes. Add minced garlic, Vegeta, ginger, thyme, as well as salt (only if needed since Vegeta is already salty) and pepper to taste and cook for 5 more minutes.
