I had some quail eggs left over after I made the delicious Salad with Smoked Salmon & Quail Eggs so I decided to try out a quick and easy breakfast recipe. I’m not going to start talking about the health benefits of quail eggs again because I gave you enough info in my previous post 🙂 . I’ll just say that this is a very tasty breakfast. You can use cookie cutters to make different shaped toasts… I’m sure your kids will love that ;).
Time: 17 min, Prep: 10 min. Cook: 7 min.
Servings: 6
Ingredients:
- 6 bread slices
- 6 quail eggs
- 5-8 olives
- 2 bacon slices
- 2 cheddar cheese slices
- salt
Directions:
As I mentioned, if you want to have some fun use a cookie cutter to cut the bread slices in various shapes. I made some nice stars this time :).
Using a teaspoon or even with your finger, press in the middle of each slice of bread to make a hole.
Crack each egg and place one on each slice of bread in the hole you just made.
Cut the cheddar cheese, bacon and olives in small pieces and place them on each slice of bread. You can sprinkle some salt if you like.
Place the slices of bread in a pan and bake for 5-7 minutes in the preheated oven.
