With just four basic ingredients and only 15 minutes of your time, you can enjoy fresh and warm pita bread that’s perfect for any meal. This recipe requires no yeast and no complicated techniques. Using only flour, kefir, salt, and a bit of olive oil, you’ll be amazed at how easy it is to create a classic Middle Eastern staple. Add a touch of garlic and butter to take this simple bread to a whole new level of flavour.

Ingredients
- 500 ml kefir (2 cups + 2 Tbsp), at room temperature
- 700 g ( 5.8 cups) all purpose flour
- 4 Tbsp (20 ml) olive oil
- 2 tsp (10 g) salt
- butter + 1 garlic clove to spread on top (optional)
Directions
In a large mixing bowl, combine the flour, kefir, salt, and olive oil. Mix everything together with a spoon or your hands until the dough forms a ball.
Then, lightly flour your work surface, transfer the dough to it and knead it for 2 minutes until it becomes smooth and elastic.
Divide the dough into 10 evenly sized pieces.
Shape each piece into a ball.
Lightly flour your work surface, and roll each dough ball to form the pita bread.
Cook each pita bread on medium heat on a flat top grill or on a cast iron griddle placed on the barbecue grill. Cook the pitas two minutes on one side, flip them and cook one more minute. They should have golden brown spots when they’re cooked.
You can also cook these in a non-stick pan but it might take you longer than 15 minutes if your pan is small and you need to cook one pita at a time :). Heat the non-stick pan over medium-high heat. Once the pan is hot, place one of the rolled-out circles of dough onto the pan and cook two minutes on one side and one minute on the other side.
To take the pita bread to the next level, spread some butter on top and it will instantly melt. Then, rub the pita with the cut side of a peeled garlic clove half.
