I am a big fan of mushrooms and I am always looking for new recipes to enjoy them. Stuffed mushrooms are a classic party appetizer so I couldn’t resist making them for our New Year’s party. I really enjoyed the fresh flavour of the mushrooms stuffed with chicken and vegetables and topped with cheese. Ingredients:
- 25 champignon mushrooms
- 100 g chicken breast
- 100 g shredded mozzarella cheese
- ½ red or yellow bell pepper
- 10 cherry tomatoes (or 1 grape tomato)
- 150 ml white wine
- 150 ml water
- 2 Tbsp olive oil
- 2 Tbsp fresh parsley, finely chopped
- Salt and pepper
Directions:
Preheat the oven to 350°F (180°C).
Thoroughly wash mushrooms and remove the stems. Cut the chicken breast, pepper and tomatoes into small pieces. Grease a baking pan with olive oil and place mushroom caps, hollow side up, in a single layer.
Season with salt and pepper and fill each mushroom cap with pieces of chicken, pepper and tomato. Sprinkle shredded cheese and parsley over the top.
Pour the wine and water in the pan and bake for about 30 minutes, until the mushrooms are tender and the cheese has melted.
Sprinkle more freshly chopped parsley and serve warm.
