Crispy Roasted Asparagus

Asparagus is one of those veggies that we love eating during this time of the year. I’m a bit sad that the asparagus season is almost over as we love to pick our own veggies at local farms or buy them at the farmers’ market… they taste so much better than the ones you buy from a grocery store!  This Crispy Roasted Asparagus is one of our favourite side dishes because it’s delicious, takes only minutes to make and is super healthy (it’s packed with antioxidants, folate, vitamins A, C, E and K).  Plus you only need 4 ingredients: asparagus, salt, pepper and olive oil.

I must say that I wasn’t always a big fan of asparagus and that’s because the first time I tried it (I was maybe 22 years old), I hated it! George kept saying how much he loved asparagus and once in a while he would buy canned asparagus. I just found it so mushy and disgusting and never tried it for years… until a few years ago when we went to pick our own asparagus and decided to cook it this way. The flavour is great and the stalks are still firm and crispy… no mushiness at all!

I usually don’t fire up the outside grill just to cook a bunch of asparagus so most of the times I make this on the stove top in a grill pan. It’s faster to make this way and I love how it turns out… the grill marks are really nice as well : -) ! 

Time: 10 min.Prep: 2 min.  Cook: 8 min.
Servings: 4

Ingredients:

  • 1 bunch asparagus
  • 5 Tbsp olive oil
  • Sea salt & pepper to taste

Directions:

Rinse the asparagus and cut off about an inch (2.5 cm) at the bottom of the stalks.

Drizzle with olive oil, season with salt and pepper and give it a quick toss.

Place the asparagus in the grill pan, in a single layer. Roast for 4-5 minutes on each side on medium heat.

Water, oil for frying, and other essential spices in anyone’s cupboard (salt, pepper, paprika, oregano, basil,  rosemary, chili, curry, bay leaves, thyme, cinnamon , vanilla extract, sugar) do not count!
