Spaghetti with Salami is one of my mother’s quick and easy recipes. She used to cook pasta quite often when I was a kid. It’s so easy to make that there is no reason you cannot have pasta quite often. You can have your perfect family meal ready in just half an hour. I really like this recipe with salami (or maybe I’m just too used to my mom’s recipe) but you can also replace the salami with Italian sausages, or ground meat such as pork or beef.

Ingredients:
- 375 g spaghetti
- 300 g salami
- 300 g tomato paste + 100 ml water
- 1-2 garlic cloves, crushed
- 1 Tbsp dried oregano
- 1 Tbsp dried basil
- salt and pepper to taste
- 2 Tbsp olive oil
- 100 g Parmesan cheese
Directions:
Bring a large pot of lightly salted water to a boil. Add pasta and cook for about 10 minutes or until al dente. Drain and set aside.
Meanwhile, cut salami into 1/2cm slices and then cut into thin strips. Heat the oil in a large skillet and add the salami. Cook over medium heat for 4-5 minutes until crisp. Stir in the garlic.
Add salt, pepper, oregano, basil, tomato paste and water and simmer over medium-low heat for 5 more minutes. Remove from the heat and stir in Parmesan cheese.
Mix the sauce with the cooked pasta and serve topped with Parmesan.
