I’ve had some cedar planks around since we bought our grill this summer and never used them. Today was nice and sunny so I thought this would be the perfect day for grilling and a good occasion to use those cedar planks to make grilled salmon (my husband’s favourite fish). These cedar plank-grilled salmon fillets are incredibly tender and have a nice smoky flavour from the cedar. In this recipe I soaked the planks in warm water but you could use white wine or apple cider to accent wood aromas and add a richer flavour to your salmon. You can serve the salmon with Roasted Vegetables.

Servings: 4-6
Ingredients:
- 3 pounds (1.3 kg) salmon fillets
- Juice from 2 lemons
- 4 Tbsp honey
- 230 ml (1 cup) olive oil
- 200 ml (1 cup) soy sauce
- 4-5 garlic cloves
- 1 large red onion
- Salt and pepper to taste
- Cedar grilling planks, soaked for 2 hours in warm water
Directions:
Mince the garlic and slice the onion.
Combine the olive oil, soy sauce and honey in a large bowl. Add the minced garlic, half of the sliced onions (I grilled the remaining onion slices separately) and the lemon juice.
Sprinkle salt and freshly ground black pepper onto the fish fillets.
Place the salmon fillets in the marinade, turn to coat and marinate for 30 minutes to an hour.
Preheat the grill to 180°C (350°F) and place the planks on the grills. When they start to smoke, lay the salmon fillets on the planks skin-side down.
Close the grill lid and cook for about 15-20 minutes, depending on thickness of fillets. Small fillets will cook more quickly than larger cuts.
