This is a very simple dish with a great taste that can be served either as a main course or as a side dish. I know this recipe is about baking potatoes but, the key ingredient that makes this dish so delicious is the smoked bacon added to the sauce that is mixed with the potatoes. I’m not sure why but all guys seem to love bacon :)… no wonder this is one of my husband’s favourite dishes.
Time: 60 min, Prep: 15 min. Cook: 45 min.
Servings: 6-8
Ingredients:
- 12 Yukon gold potatoes
- 2 bell peppers
- 1 onion
- 5-6 garlic cloves
- 250 g tomato paste + 200 ml water
- 600 g smoked bacon
- salt
- freshly chopped parsley
Directions:
Peel and cut potatoes into chunks. Place them in a pot and cover with cold salted water. Bring to a boil and cook for about 5-7 minutes or until half cooked. Drain water and place potatoes in a baking dish.
In the meantime, finely chop the onions and garlic cloves. Heat the oil in a pan over medium heat and cook the garlic and onions until translucent. Cut the peppers and add them to the pan. Cook for another 5 minutes and then add the tomato paste and water. Cook stirring for another 3-4 minutes.
Cut the bacon into small pieces. Fry the bacon pieces in a pan until brow and crispy. Discard the fat released.
Then combine the bacon with the tomato mixture and mix with the potatoes. Add more salt if necessary. Bake for 30 minutes in the preheated oven.
Lastly, sprinkle some freshly chopped parsley on top and serve warm.
