Ingredients
- 1.4 kg (3 lbs) rack of pork ribs
- 60 ml (1/4 cup) olive oil
- 2 tablespoons salt
- 1 teaspoon pepper
- 4 minced garlic cloves or 1 tablespoon garlic powder
- 2 tablespoons dried oregano
- 2 tablespoons dried thyme
- 60 ml (1/4 cup) white wine
- 120 ml (1/2 cup) water
For the barbecue sauce:
- 400 g ketchup (1.5 cups)
- 120 ml water (1/2 cup)
- 60 ml apple cider vinegar (1/4 cup)
- 60 ml Worcestershire sauce (1/4 cup)
- 2 tablespoons mustard
- 2 teaspoons onion powder
- 2 tablespoons paprika
- 1 tablespoon garlic powder or 4 minced garlic cloves
- 3 tablespoons brown sugar
Directions
Preheat the oven to 150°C (300°F).
In a small bowl, combine the olive oil, salt, pepper, minced garlic or garlic powder, oregano, and thyme to make the rub.
Line a baking pan with parchment paper and place the rack of pork ribs on it.
Rub the prepared seasoning mixture evenly over both sides of the ribs, making sure to cover them completely.
Pour the white wine and water into the baking pan, then cover the pan with foil.
Place the pan in the preheated oven and bake for 2 hours. The low temperature and covered baking will help tenderize the ribs.
While the ribs are baking, prepare the barbecue sauce. In a medium-sized saucepan, combine the ketchup, water, apple cider vinegar, Worcestershire sauce, mustard, onion powder, paprika, garlic powder or minced garlic cloves, and brown sugar.
Simmer the sauce over medium heat for 15-20 minutes, stirring occasionally, until the sauce thickens slightly and the flavours meld together. Set aside.
After 2 hours of baking, remove the pan from the oven and carefully uncover the ribs.
Brush a generous amount of the prepared barbecue sauce onto both sides of the ribs.
Return the ribs to the oven, uncovered, and bake for an additional 30-40 minutes. This will allow the sauce to caramelize and create a flavourful crust on the ribs.
Once the ribs are done baking, remove them from the oven and let them rest for a few minutes.
Serve the oven-baked pork ribs with additional barbecue sauce on the side and enjoy!
