This Cheese & Omelette Roulade is a unique and mouthwatering recipe that combines the savoury goodness of melted cheese, the creaminess of cream cheese, the savouriness of bacon bits (or smoked sausage pieces), the tanginess of pickles, and the fluffiness of an omelette.
Serve it as an appetizer, a party snack, or as a delightful addition to your brunch table.
Ingredients
- 500 g firm ripened cheese, I used a firm ripened cheese wheel
- 4 eggs
- 200 g bacon crumbles or cooked smoked sausages cut into tiny pieces
- 200 g Philadelphia cream cheese of your choice – plain, with dill, with pickles etc.
- 200 g pickles, cut into thin strips
- salt, pepper and 2-3 Tbsp olive oil for frying the omelette
You will also need plastic wrap and a rolling pin.
Directions
Melt the cheese until it reaches a thick pouring consistency either using the microwave or a double boiler method.
Cut the cheese into small, evenly-sized pieces. This will help it melt more evenly and quickly.
Microwave Method:
- Place the cheese in a microwave-safe bowl or container. Make sure the container is microwave-safe, as some plastics can melt or release harmful chemicals when exposed to heat.
- Microwave the cheese on low power or using short bursts of medium power. Start with 30-second intervals to prevent overheating and ensure even melting.
- After each interval, remove the bowl from the microwave and stir the cheese. This helps distribute the heat and promotes even melting.
- Repeat the microwave and stirring process until the cheese has melted to a thick pouring consistency.
Double Boiler Method:
- Fill a pot with water, ensuring it is about one-third full, and bring it to a simmer on the stove.
- Place a heatproof bowl or the top part of a double boiler over the simmering water. The bowl should fit securely without touching the water.
- Add the cheese to the bowl and let it melt slowly over the simmering water. Stir occasionally to promote even melting.
- Continue heating and stirring until the cheese has melted to a thick pouring consistency.
Place a piece of plastic wrap on a flat surface. Pour the melted cheese in the middle and place another piece of plastic wrap on top. Use a rolling pin to carefully roll out the cheese between the sheets of plastic wrap into a rectangle, until it forms a thin, even layer. Set aside.
Remove the top sheet of plastic wrap. Spread a thin layer of cream cheese evenly over the cheese surface.
To make the omelette, lightly beat the eggs. Season them with salt and pepper and add 2 tablespoons of bacon crumbles or cooked sausage pieces. Cook an omelette in the approximate shape and size of your rolled cheese.
Place the omelette on top of the rolled cheese covered in cream cheese.
Sprinkle the remaining bacon crumbles or sausage pieces evenly on top. Place thin strips of pickles on top.
With all the delicious layers in place, carefully roll the roulade using the plastic wrap as a guide. Apply gentle pressure to ensure a tight and compact roll; ensure it’s covered tightly with the plastic wrap. Once rolled, refrigerate for at least 2 hours to allow the roulade to set and hold its shape.
Lastly, slice the cheese & omelette roulade into 2.5 cm (1’’) wide slices before serving. The resulting pinwheel-like slices will showcase the beautiful layers of flavours.
