This One-Pot Meat & Potato Dinner meal is easy to make and uses just five main ingredients. It’s a one-pot dish so you don’t have to worry about a pile of dirty dishes to wash after. You can make it with either pork of beef. I love its simplicity and taste!
Ingredients
- 3 large yellow onions
- 1-2 bell peppers
- 900 g meat – pork shoulder or beef stewing meat
- 700 g yellow potatoes
- 700 ml diced tomatoes
- Salt/pepper, optional: 1 Tbsp or Italian herbs
- 3-4 Tbsp olive oil
Directions
Preheat the oven to 350 °F (175 °C).
Peel and chop onions. Heat the oil in an oven-proof pan over medium heat and cook the onions until translucent (~ 8-10 minutes).
Chop the bell pepper, add it over the onions and cook for another 5 minutes.
Cut the meat into small cubes and add it to the pan. Season everything with salt and pepper and the Italian herbs if you’re using them. Cook everything on medium-high heat for 10 minutes.
Peel and slice the potatoes into thin wedges.
Stir in the diced tomatoes and potatoes and cook stirring for another 5-7 minutes.
Place the pan in the oven and bake for 45 mins – 1 hour, until the potatoes and meat are fully cooked.
