Marinated mushrooms are easy to make and very tasty. I must give my dad credit for coming up with this recipe. He’s been making these marinated mushrooms for a long time and actually he was the chef in the kitchen this time as well. I only took care of the pictures :). You can enjoy these mushrooms in so many ways! They are great as an appetizer for buffet style gatherings. You can have them as a light meal, use them in salads or as a garnish.

Ingredients:
- 1 kg mushrooms
- 50 ml sunflower oil
- Lemon juice from 2 small lemons
- 5 bay leaves
- ½ tsp peppercorns & salt to taste
Directions:
Wash mushrooms thoroughly and slice them.
In a large pot, add the mushrooms, oil, lemon juice, bay leaves, peppercorns, salt and 100 ml water. Let everything simmer on medium-low heat for about 40-45 minutes stirring once in a while.
Taste and adjust seasoning. Once fairly cool, you can transfer the mushrooms and marinade to a jar that can be stored in the refrigerator for a few weeks.
