Ham and cheese rolls, wraps or sandwiches are very popular as appetizers. This weekend I’ve decided to give these a slightly different twist and make a Ham and Cheese Roll using a cottage cheese, ham and peppers filling rolled in a sheet of cheddar cheese (no bread or pita bread). Servings: 20-25 slices
Ingredients:
- 500 g Cottage cheese
- 150 g cooked ham
- ¼ red pepper
- ¼ yellow pepper
- ¼ green pepper
- salt and pepper
- 350 g grated cheddar cheese
- 100 g butter, at room temperature
Directions:
Cut ham and peppers into very small cubes. Place cottage cheese in a bowl and season with salt and pepper.
In a separate bowl mix the butter and cheddar cheese. Knead with your hands until all ingredients are incorporated. Note that if you don’t use salted butter you may want to season with salt.
First of all lay out a sheet of plastic wrap on your work surface. Use your hands to roll the cheddar cheese mixture into a thick cylinder (~ 22-25 cm long). Then press it with your hands and roll it using a rolling pin into a rectangle that is about ½ cm thick. If it becomes sticky you can just lightly dust your rolling pin with flour.
Spread the cheese and ham mixture evenly. Roll it up and pinch the ends to seal it.
Wrap the ham and cheese roll in plastic wrap and refrigerate for at least 2 hours.
Slice into pieces about 1-1.5 cm thick and serve on a bed of lettuce.
