Ok, I’ve made this a while ago, when it was still hot outside, but didn’t get a chance to post the recipe. I thought it would be a good idea to post this recipe before it starts snowing : )))… or who knows, maybe some people like eating ice cream in winter more than summer! This recipe is actually for an awesome grilled banana sauce also known as bananas foster, the ice cream is store-bought. You can use this delicious sauce for topping pancakes as well.
Time: 20 min, Prep: 5 min. Cook: 15 min
Servings: 4
Ingredients:
- 2 ripe but firm bananas
- 2 Tbsp unsalted butter, melted
- ¼ tsp ground cinnamon
- A pinch of nutmeg
- ¼ cup banana liqueur
- 2 Tbsp unsalted butter
- 1/3 cup brown sugar
- ½ cup dark rum
- Vanilla ice cream / pancakes
Preparation:
Cut each banana in half lengthwise and brush the cut sides with the melted butter.
Grill the bananas (cut side down) on direct medium heat for 5-7 minutes or until light brown grill marks form.
Peel the banana halves, cut them into quarters and set aside.
In a large pan melt the remaining 2 tablespoons of butter. Add the brown sugar and cinnamon and cook stirring constantly on medium heat for about 2 minutes. Add the rum and banana liqueur. Allow the liquid to warm for a few seconds and then carefully ignite the rum. Continue cooking until flame dies out.
Add the banana pieces and cook for 2 to 3 minutes.
Spoon the banana mixture over the ice cream and drizzle with the sauce. Serve immediately.
