Fusilli with Tuna, Capers and Parsley is a healthy dish that is very quick and easy to prepare. You can have your meal ready in just 25 minutes. The fresh lemon juice adds a light and refreshing flavour that you’ll definitely enjoy.

Ingredients:
- 425 g canned tuna in spring water
- 2 Tbsp olive oil
- 2 cloves garlic
- 2 small red chillies
- 3 Tbsp drained capers
- fresh parsley (~ 3 Tbsp chopped)
- juice from 1 lemon
- salt and pepper
- 375 g fusilli
- 125 ml hot chicken stock
Directions:
Drain tuna, place in a large bowl and flake lightly with a fork.
Meanwhile, bring 3.5 l of salted water to a boil and add pasta. Cook the pasta for about 10 minutes, or until al dente. Drain the pasta.
Finely chop the garlic and red chillies. Place them in a small bowl and add chopped parsley, oil, capers and lemon juice.
Pour over the tuna and mix lightly. Season with salt and paper to taste.
Combine tuna mixture with pasta and add the chicken stock to give it a moist consistency.
