This is another dessert recipe with apples which takes only 30 minutes to prepare. The apple squares are good to serve as snacks, breakfast or even brunch.

Ingredients:
- 9 eggs
- 375 g sugar + 3 tablespoons
- 1 teaspoon baking powder
- 600 g white flour
- 2 pouches vanilla sugar (18 g)
- 375 ml sunflower oil
- 1 kg pink lady apples
- 2-3 tablespoons of ground cinnamon You also need a 35 x 35 cm (14’’ x 14’’) baking pan and oil or butter to grease the pan.
Directions:
Peel, core and shred the apples in a food processor or with a hand grater.
Whisk the egg whites on high speed until stiff peaks form. Add 375 g sugar and vanilla sugar and beat until dissolved. Beat in egg yolks all at once.
Start adding the oil, little by little and make sure it has fully incorporated. Mix together the flour and the baking powder. Slow down the mixer and carefully blend in the dry mixture until just combined.
Preheat oven to 150°C (300°F).Lightly grease the baking pan. Spread half of the batter evenly into pan. Arrange shredded apples over the batter. In a small bowl, stir together the cinnamon and remaining sugar; sprinkle over the apples. Spread the other half of the batter on top of the apples.
Bake for 30 minutes or until light brown. Cool in the pan, sprinkle icing sugar through a small sieve and cut into squares.
