This is a pudding loved by all Romanian children, or at least it was 15 years ago when you didn’t have all the sweets that kids eat today. I remember loving it and asking my mom to make it all the time. I haven’t had this in over a decade although it’s extremely easy to make. On a second thought, I don’t think I’ve ever made this dessert because my mom used to make it back home. For all the moms out there, this is also a great dessert for babies and toddlers.

Ingredients:
- 1 l milk
- 200 g semolina (~ 1 ¼ cups)
- 5 Tbsp sugar
- 1 pouch vanilla sugar (9 g)
- topping – you can serve it topped with fresh fruits, cherry jam, homemade sugar syrup, chopped nuts or you can just sprinkle some ground cinnamon on top.
This time I made a raspberry topping using:
- 3 Tbsp fresh raspberries
- 2-3 Tbsp sugar
- 3 Tbsp water
Directions:
In a saucepan over medium heat, combine sugar, vanilla sugar and milk. Heat the milk until almost simmering.
Gradually sprinkle in the semolina stirring continuously. Continue to stir until mixture has a thick consistency. If the mixture is too thick, add a little more warm milk. Keep in mind that the pudding will get thicker once it has cooled so don’t make it too thick.
For the raspberry topping, just combine all ingredients and stir over medium-low heat until the sugar melts.
Pour the semolina pudding into small serving bowls or transparent glasses and top with your favourite toppings. Serve hot or chilled.
