These delightful Plum Walnut Pastries combine the sweetness of plum jam with the crunchiness of roasted walnuts, all wrapped in layers of buttery puff pastry. This treat is perfect for breakfast, dessert, or simply as a delightful snack with a cup of coffee or milk.
Ingredients
- 450 g pre-rolled puff pastry sheets , I had two 25 cm x 25 cm (10’’ x 10’’) sheets
- 200 g plum jam
- 50-80 g walnuts
- 1 beaten egg
- powdered sugar for dusting
Directions
Preheat your oven to 180°C (350°F).
Spread the walnuts evenly on a baking sheet.
Toast the walnuts in the preheated oven for about 8-10 minutes or until they become fragrant and lightly golden. Be sure to keep a close eye on them as they can quickly go from perfectly toasted to overdone.
Remove the toasted walnuts from the oven and let them cool for a few minutes. Once they have cooled, roughly break or chop them into small pieces.
In a bowl, mix the plum jam and roasted walnuts.
Preheat the oven to 190°C (375°F).
Line a baking sheet with parchment paper.
Lay out the 2 pre-rolled sheets of puff pastry on a clean, floured surface. Gently roll them out if they are not already at your desired thickness.
Using a sharp knife, cut each sheet into six equal-sized rectangles. You should have a total of 12 rectangles.
Spread jam-walnut mixture on each rectangle.
Carefully roll up each rectangle, starting from one edge, until you have a neat pastry roll. Make sure the seam side is facing down.
Place the pastry rolls on the prepared baking sheet, leaving some space between them to allow for expansion.
Brush the top of the rolls with the beaten egg.
Bake in the preheated oven for 15-20 minutes or until the pastry turns golden brown and puffs up.
Remove the pastry rolls from the oven and let them cool slightly. Once they are still warm but not hot, dust them generously with powdered sugar for a beautiful finish.
Serve them warm for the best flavour and texture.
