A 1-minute frosting recipe for your cakes and cupcakes! How awesome is that? It can’t get any easier and faster than this to make your delicious frosting, and with only 3 ingredients! Also, it’s a great frosting if you’re not a fan of buttercream as it uses mascarpone cheese as the main ingredient. The key to getting the right piping consistency for this frosting is to not overmix it or mix it on high speed.
Ingredients
- 375 g mascarpone cheese, cold from the fridge
- 185 g sweetened condensed milk, cold from the fridge
- 185 g Nutella
This makes enough frosting for 12 big cupcakes & 12 mini cupcakes OR 18 big cupcakes. Or it’s enough to frost a 20 cm (7 inch) round cake.
Directions
Place the mascarpone cheese and condensed in a mixing bowl. You can use a simple hand mixer or a stand mixer for this.
Mix for 50 seconds on low-medium speed. Stop halfway through to scrape the sides of the bowl with a spatula.
Add the Nutella and mix for 10 more seconds on low speed.
Do not overmix as the frosting will get too soft and won’t have a piping consistency!
Also, if you want to make more frosting, you need to adjust the mixing time. For example, if you double the ingredients, you can almost double the time. I’d mix for about 1.5 minutes the mascarpone cheese and condensed milk before adding the Nutella and mixing for another 10-15 seconds.
Voila, as easy as that!

Would this work with regular Philadelphia cream cheese instead of mascarpone?

I haven’t tried it yet but Philadelphia has a different taste (saltier) and fat content so it might not turn out as good. I usually use Philadelphia cream cheese in butter-based frostings. Or, if you’re looking for something simpler, just mix 115 g of butter (1 butter stick at room temperature) with 100 g of powdered sugar until light and fluffy and then incorporate 400 g of cream cheese with a spatula or with the mixer running on low.
