For lunch or dinner, you can make this easy and healthy Chicken Caesar Salad recipe. When dining out, this is the salad I usually request if the restaurant offers it on the menu. You might think the Caesar salad package mixes and salad kits are a better (and easier) choice but the homemade salad is just as easy to make and much more delicious.

Ingredients:
- 1 chicken breast, skinless (~400g)
- 3 Tbsp olive oil
- salt and pepper
- 2 slices bacon
- 1 head of romaine lettuce
- 4 Tbsp grated cheese (Parmesan)

You can purchase your favorite Caesar salad dressing but I highly recommend to make it at home using the following ingredients:
- juice of ½ lemon
- 1.5 Tbsp mayonnaise
- 5 Tbsp olive oil
- 1 tsp vinegar
- 1 tsp Worcestershire sauce
- 2 tsp anchovy paste
- 1 clove garlic, minced
Directions:
Brush the chicken with 3 tablespoons olive oil and season with salt and pepper. You can either grill the chicken breast on a barbecue/grill or bake (broil) it in the oven for about 15 minutes, until cooked through and golden.
Also, fry the bacon in a non-stick pan until crisp and drain on paper towels.
For the dressing, whisk together lemon juice, mayonnaise, olive oil, vinegar, Worcestershire sauce, anchovy paste and minced garlic.
Thoroughly wash the romaine lettuce and tear into bite-sized pieces.
Place the romaine lettuce in a salad bowl. Add the croutons, the bacon cut into strips, and grated cheese. Pour dressing on salad and toss gently to mix. Cut the chicken into thin slices and arrange them over the salad on a serving plate.
