This Bean, Beet & Lentil Salad is super easy to make and so healthy. The beans and beets are a great source of nutrients such as fiber, iron, vitamins A & C, magnesium, calcium and others. I love this salad and am very thankful to my friend Cristina for sharing the recipe :). It’s a great option for vegetarians/vegans as well. So I encourage you to try making it and just dig in and enjoy this super healthy and delicious salad!

Servings: 8-12 servings
Ingredients:
- 6 small beets
- 3 cans mixed beans
- 1 can lentils
- fresh parsley
- juice from 1 lemon
- apple cider vinegar
- olive oil
- 2 Tbsp sugar
Directions:
Peel and shred the beets.
Place the canned beans and lentils in a strainer and thoroughly rinse them with cold water.
Mix the oil, vinegar, lemon juice and sugar in a small bowl.
Combine the rinsed beans, lentils and beets.
Add the chopped parsley and salad dressing.
Toss to combine, serve and enjoy!
