This is the main dish recipe I was talking about in my previous post. I spotted the recipe in a Romanian magazine called ‘Bucataria pentru toti’ (the September issue) so I thought I should give it a try. It was very good but very different from what I usually cook. The plums give the chicken a delicious fruity flavour that will delight your taste buds.
Time: 60 min. Prep: 15 min. Cook: 45 min.
Servings: 6-8
Ingredients:
- 12-15 plums
- 5-7 walnuts
- 600 g chicken breast
- 4 Tbsp freshly chopped dill
- 3 Tbsp olive oil
- salt and pepper
Directions:
Thinly slice the chicken breast and season with salt and pepper. Heat the olive oil in a pan over medium heat and add the chicken breast. Cook for 8-10 minutes, or until lightly browned.
In the meantime, wash the plums and make a cut lengthwise to remove the stones. Place walnuts in the middle.
Remove the chicken from the pan, add more olive oil if needed, and add the plums to the pan. Cook for a few minutes on each side.
Arrange the chicken and plums in an ovenproof casserole dish, cover and place in the oven for 20 minutes. Sprinkle dill on top and serve.
