Introducing my new favourite baked potatoes recipe – Smashed Baked Potatoes with Bacon! They are full of flavour from all the spices and bacon, fluffy on the inside and as crispy or soft as you want them on the outside!
Ingredients
- 1.5 kg small or medium baby potatoes, unpeeled + 1 Tbsp of salt, to be used when boiling the potatoes
- 3 tsp dried parsley flakes
- 2 tsp salt
- 2 tsp garlic powder
- 3 tsp sweet paprika
- 100 g parmesan cheese, grated
- 200-250g natural pork bacon, thinly sliced
- fresh parsley to sprinkle on top (optional)
Directions
Preheat the oven to 450 °F (232 °C).
Wash the potatoes, place them in a pot and cover them with water. Add a tablespoon of salt and bring them to a boil. Cook medium-sized potatoes for about 10 minutes and small-sized potatoes for 5-7 minutes. Drain the potatoes. Let them dry for 5 minutes if you’re looking for crispier baked potatoes.
Mix all the spices and the grated parmesan.
Spread the boiled potatoes on a baking sheet lined with parchment paper. Smash the potatoes on the tray using the bottom of a cup. For crispier potatoes, make them thinner and for fluffier and soft potatoes, leave them thicker. You can also let them dry for 5 extra minutes again if you’re looking for crispier potatoes.
Sprinkle the spices and parmesan on top of each smashed potato. Drizzle olive oil on top.
Cook the potatoes in the oven for 15 minutes.
Cut each slice of bacon into smaller pieces.
Remove the potatoes from the oven and add the bacon pieces on top. Bake for another 20 minutes.
Remove them from the oven and sprinkle some roughly chopped parsley on top.
Serve hot as a snack or as a side dish next to your favourite meat.
