This BLAT Ladybug Sandwich is quick and easy to make and your kids will love it! It’s a healthy and whimsical sandwich combines the irresistible flavours of crispy bacon, fresh lettuce, juicy tomato slices, creamy avocado, and tangy olives.
Ingredients
- 1 bread slice
- 1/2 ripe & small avocado, thinly sliced
- 1 tomato slice, ~ 3/4 cm (1/3’’) thick
- 3-4 bacon slices
- 1-2 lettuce leaves, your favourite kind
- 4-5 black olives
- 1 stem of parsley or dill, or any herb you have around
- 1 tsp of cream cheese
- salt and pepper
- 1 Wilton/Ateco round decorating tip #8 (or a 3/4’’ round cutter)
Directions
Cut the bacon slices in half and cook them over medium heat. Turn over each slice from time to time, until just crips.
If desired, toast the slice of bread lightly.
Place the avocado slices on the bread slice and season this with salt and pepper.
Arrange the bacon slices on top. Then, place the lettuce leaves on top.
Make the ladybug’s body out of a tomato slice cut in two. Then, arrange the ladybug’s tomato body on the lettuce.
Cut the ends of three olives to make the black dots. I used pitted olives but the ends of unpitted ones would look better.
Use half an olive, cut lengthwise, for the ladybug’s head. Then, spread or pipe cream cheese to make two small white dots for the eyes. Use the small part of the round decorating to cut two round pieces out of a black olive slice to make the pupils.
Lastly, make the ladybug antennae out of the parsley stem.
