This Slow-Cooker Whole Chicken with Veggies is the easiest and healthiest meal you can make. You only need 5 main ingredients (salt, pepper & essential spices do not count) and it takes minutes to put together in the slow cooker. A few hours later you’ll have a tender and succulent chicken with a delicious garlicky and mild paprika flavour… I’m telling you this recipe is to die for! But, I must admit, using organic chicken and produce makes a huge difference when it comes to taste! Most of my life I’ve had organic meat & vegetables from my grandparents’ farm… 10 years ago “organic”, “free-range”, “hormone free”, “GMO” weren’t even in my vocabulary, literally! And honestly, there is nothing better that organic, tasty homegrown produce and meat!
Time: 4.25 hrs. Prep: 15 min. Cook: 4 hrs. on High or 8 hrs. on Low
Servings: 6
Ingredients:
- 1 whole organic chicken
- 5 garlic cloves
- 1.5 pounds small potatoes
- 1.5 pounds green beans, washed and trimmed (I stocked up my freezer with organic green beans from the Farmers’ market in the late Fall)
- 3 Tbsp butter
- 1 Tbsp salt
- 1 Tbsp pepper
- 2 Tbsp paprika
Directions:
Remove and discard any excess fat from the chicken. Make a rub of minced garlic, melted butter, paprika, salt and pepper. Rub the outside of the skin and the cavity with the mixture and tuck some under the bird’s skin as well. Pierce the potatoes with a fork to let the juices from the chicken in. Place the potatoes in the slow cooker and the whole chicken on top. There is no need to add water or other liquids!
Cook for 3.5 hours on high (or 7 hours on low) and then add the green beans.
Cook for half an hour more on high (or an hour on low) and get ready to lick your fingers 🙂 !

Did you mean to say 4 hours on low or 8 hours on high? That seems counterintuitive. I would imagine it’s 8 hours on low and 4 hours on high?
