A simple Peas & Chicken Stew dish that is hearty, flavourful, and perfect for any meal. You can serve it with crusty bread to soak up the delicious sauce.
Ingredients
- 1 chicken breast (about 200 g)
- 300 g (2 1/4 cups) green peas (frozen or fresh)
- 500 ml (1 large can) crushed tomatoes
- 1 large onion, diced
- 2 carrots, peeled and diced
- 2 Tbsp dry Italian herbs & spices
- a handful of dill, chopped (optional)
- 4 Tbsp olive oil
- salt, to taste
- pepper, to taste
Directions
Cut chicken breast into small pieces. Season with salt, pepper, and half of the Italian seasoning. In a large pot, heat 2 tablespoons of oil over medium heat. Add the chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side. Remove the chicken from the pot and set aside.
In the same pot, add the remaining oil. Add the diced onions and carrots, sautéing until the onions are translucent and the carrots start to soften, about 5 minutes.
Pour in the crushed tomatoes, along with the rest of the Italian seasoning. Stir well to combine. Bring the mixture to a simmer.
Return the chicken breasts to the pot, nestling them into the tomato mixture. Cover and let simmer for 20-25 minutes, or until the chicken is cooked through.
Add the green peas to the pot and stir. Let cook for an additional 5 minutes. If using frozen peas, make sure they are thawed before adding.
Add the chopped dill and turn off the heat.
Taste and adjust seasoning with salt and pepper as needed.
