I always find oven-baked drumsticks are the easiest to make and pretty tasty. Today I have decided to tweak a little bit my usual recipe to make the dish look very nice and presentable (for my blog viewers :)). The trick was to brush the chicken drumsticks with honey and soy sauce. They did not only look good but the honey-soy sauce gave them a yummy flavour.
Time:45 min, Prep: 15 min. Cook: 30 min.
Servings: 5
Ingredients:
- 10 chicken drumsticks
- 1 onion
- 3 carrots
- 5-6 garlic cloves
- Salt and pepper to season
- 4-5 tablespoons olive oil (for brushing drumsticks)
- 2 tablespoons olive oil (for preparing the pan)
- 500 ml chicken stock (or you can use a substitute – Vegeta powder stock)
- 160 g honey
- 75 ml water
- 2 tablespoons soy sauce
I used steamed rice as a side dish. For 5 servings you need 250-300 g of long grain Basmati rice. You can also add some freshly chopped parsley for serving.
Directions:
Brush chicken drumsticks with olive oil and season with salt and pepper. Peal and chop onion and carrots into rings and mince garlic cloves.
Preheat oven to 200°C (400°F). Brush roasting pan with olive oil and place chicken drumsticks in the pan. Add chopped onion, carrots and minced garlic and pour chicken stock into pan. Bake for about 30 minutes and from time to time turn and baste chicken with juices from pan.
Meanwhile, combine honey, soy sauce and water. Remove pan from oven and brush chicken with honey mixture. Bake for 10 more minutes.
Remove pan from oven again to brush chicken with honey mixture on the other side. Return to oven and bake for 10-15 more minutes or until golden brown.
Serve warm with steamed rice.
