An apple cake is the perfect Fall dessert! The first time I tried this recipe was during my early high school years. This morning while flipping the pages of my first recipe notebook from 1999 I came across this apple cake recipe. It brought back sweet memories so I decided to try it out again. Usually I plan ahead of time what I want to cook to avoid running to the grocery store several times a week but, for this recipe the ingredients are very basic and I had everything I needed. Ingredients:
For cake:
- 150 g unsalted butter (at room temperature)
- 150 g sugar
- 1 pouch vanilla sugar (9 g)
- ½ teaspoon salt
- A few drops of rum extract
- 4 eggs
- 1 teaspoon baking powder
- 100 g ground almonds
- 200 g white flour
For filling:
- 1 kg apples
- 60 g raisins
- 40 g sliced almonds
- 2 tablespoons of powdered sugar
You also need a baking pan with a diameter of 26 cm (10 inches), butter to grease the pan, and 1 tablespoon flour.
Directions:
Beat the butter with an electric mixer until it becomes frothy. From time to time add sugar and then vanilla sugar, the salt and rum extract.
Add the eggs one by one, mixing well between additions. Then add baking powder, the ground almonds, and add flour from time to time and mix until mixture is smooth.
Preheat oven to 180°C (350°F). Lightly grease the baking pan with butter. Dust with flour and tap out the excess. Pour batter into greased and floured pan.
Peel, core and cut apples in quarters and slightly cut them on the exterior. Place the apple quarters on the batter one next to each other and sprinkle the raisins and sliced almonds.
Bake for 60 minutes. Before serving sprinkle powdered sugar on the cake.
