I have always enjoyed my mom’s mashed cauliflower. It’s easy to make and very healthy. If you are on a low-carb diet this is your perfect choice and the great substitute for mashed potatoes. Also, creamy cauliflower makes for a great appetizer to serve alongside bread slices.
Time: 35 min, Prep: 15 min. Cook: 20 min.
Servings: 10-15
Ingredients:
- 1 cauliflower (~400 g)
- 2.5 Tbsp mayonnaise
- 3 garlic cloves
- salt
- French baguette slices
- Cherry tomatoes (optional)
- Parsley leaves (optional)
Directions:
Wash cauliflower and trim leaves. Steam the cauliflower in a pot of boiling water for 15-20 minutes or until tender when pierced with a fork.
Drain well and break the cauliflower into florets. Trim the stems and mash the cauliflower with a fork (or in a food processor).
Add minced garlic and mayonnaise and season with salt to taste.
Spread creamy cauliflower on French baguette slices and top with cherry tomatoes and parsley.
