These smoky BBQ potato skewers are perfect as a snack or a side dish. You can make them on the grill or in the oven and with only 5 main ingredients!
Main Ingredients
- 680 g (about 1.5 lbs) small potatoes, halved
- 2 tablespoons BBQ sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 2 red bell peppers, cut into chunks
Basic Pantry Ingredients
- 3 Tbsp olive oil
- 1 Tbsp salt, or more to taste
- pepper, to taste
Directions
If using a grill, preheat to medium-high heat. If using an oven, preheat to 200°C (400°F).
Boil the potato halves in water with 1 Tbsp of salt until just tender, about 8-10 minutes. Drain well.
In a large bowl, mix the boiled potatoes with olive oil, BBQ sauce, smoked paprika, garlic powder, salt, and pepper.
Thread the potatoes and red bell pepper chunks alternately onto skewers.
Grill or bake the skewers for about 20 minutes, turning occasionally, until the potatoes are crispy on the outside.
