This is a nice looking tart filled with a flavourful spinach mixture. It’s the perfect choice for your vegetarian friends and family. Also, considering the many meat-filled dishes on our traditional Christmas menu, this spinach tart gives us a good dose of healthy and low-fat food around this time of the year.
Time: 50 min, Prep: 20 min. Cook: 30 min. , plus chilling time for the dough
Servings: 8-10
Ingredients:
- 100 g unsalted butter
- 275 g (2.5 cups) all-purpose flour
- 1 tsp salt
- 100 ml water
- 4 cherry tomatoes
- 3-4 cheddar cheese slices
- 500 g creamed spinach (I posted the Creamed Spinach recipe a while ago)
You also need a Christmas tree shaped pan greased with butter.
Directions:
Preheat the oven to 350°F (180°C).
Melt the butter with 100 ml water. Combine salt, flour and melted butter.
Knead with your hands until all ingredients are incorporated. Wrap the dough in plastic foil and refrigerate for half an hour.
On a lightly floured surface, roll out the dough into a rectangle that is about ½ cm thick. Place it in the Christmas tree shaped pan and using your fingers, press the dough into the sides and bottom of the pan. Pierce the dough with a fork and bake the tart for about 30 minutes or until the tart shell is lightly brown.
Remove from the pan and let it cool. Spoon the creamed spinach into your tart shell. Cut the cherry tomatoes in halves. Cut out stars with a cookie cutter from the cheddar cheese slices. Finally, decorate the Christmas tree and dip in 🙂 !.
